Southern Fried Green Tomatoes

Making Fried Green Tomatoes reminds me of two things.  One is my top 5 favorite movies and the other is our visits to Charleston, SC.  You will find fried green tomatoes served tons of different ways in Charleston, SC; on a burger, on a grilled cheese, as an appetizer, on pizza, on top of a steak, in tacos, etc.!

 

 

Ingredients:

 

2 cups ap flour

1 cup medium white cornmeal

1 tsp onion powder

½ tsp pepper

1 tsp salt

Pinch of cayenne

2 eggs

3 medium sized green tomatoes sliced ¼” thickness

Canola Oil

Pimento Cheese (Optional)

Sriracha (Optional)

 

 

Start off by preparing your breading station.  You will need 3 bowls.  Bowl one will be one cup of AP flour, the second bowl will be the two eggs mixed, and the third bowl will be the remaining cup of AP flour, medium cornmeal, onion powder, cayenne, salt, and pepper.

Next you will need to prepare the green tomatoes.  Lay the slices on a cooking tray lined with paper towels in a single layer.  Sprinkle both sides of the green tomatoes with salt and let them sit for three minutes.  After three minutes pat them dry.  This step draws the moisture out of the green tomatoes and makes sure they get crispy and not soggy when frying.

It’s time to start the breading process.  Start by tossing the green tomato in bowl one which has the AP flour, then bowl two with the eggs, and finally bowl three with the cornmeal mixture.  Repeat this step with all of your green tomato slices.

In a skillet with high sides add ¼” of canola oil.  Heat the oil over medium heat. Add a pinch of flour to the hot oil, if it bubbles it is ready to go. *Don’t get the oil too hot or it will burn the outside without cooking the inside of the green tomatoes.

Fry the green tomatoes in batches of 4-5 slices at a time.  Let the first side get golden brown then flip until the other side is golden brown (about 5 minutes total).  Once both sides are golden brown place them on a cooling rack or paper towels to drain any excess oil.  While still hot sprinkle with salt.

 

To make the dipping sauce grab about a ½ cup of your favorite pimento cheese.  Add 1 tbsp of Sriracha, or as much as you dare!
