Quick and Easy Funnel Cake

Funnel cakes are my favorite State Fair staples. We live in Benson, NC and the NC State Fair is held in Raleigh. We always always always go to the fair just for the food. We get anything and everything we can get our hands on but when the fair goes away and we crave funnel cakes we follow this easy to do funnel cake recipe. 3 cups AP flour

¼ cup sugar

3 tsp baking powder

½ tsp cinnamon

1 pinch salt

2 eggs

1 cup water

1 cup milk

1 tsp vanilla

Powdered sugar (for topping)

Vegetable oil

Yields: 4 medium sized funnel cakes.

Get your vegetable oil heating in a skillet with high sides till it hits 375 degrees Fahrenheit. This was medium/high heat on my stove. You will know the oil is hot if you add a dab of the batter and it immediately starts bubbling and floating. If the batter sinks in the pan and no bubbling happens the oil isn’t hot enough.

While the oil is heating get your batter ready. Whisk the AP flour, sugar, baking powder, cinnamon, and salt. Now add your wet ingredients; eggs, water, milk, and vanilla. Whisk until well combined. The consistency will be like pancake batter.

We used a zip top bag with an icing tip inserted in the corner to create the ribbons of the funnel cake. You could also use a funnel or just cut the corner of the zip top bag.

Add ½ cup of batter to the zip top bag. *Make sure to cover the tip when pouring your batter into the bag!

When the oil is ready, start streaming the batter into your oil. Begin in the middle of your pan and then spiral outward. Fry for two minutes on each side or until golden brown. Continue frying in batches of ½ cup of batter.

Let the funnel cake sit on some paper towels to drain any oil. Sprinkle the powdered sugar over the top and serve! Add cinnamon to the top if you’d like; Angel was teasing me because I like cinnamon on my funnel cake.
