Chipotle Inspired Burrito Bowl
I decided to do this recipe because it had been so long since I’ve knocked the dust off the slow cooker. Every home cook needs some slow cooker recipes where all you do is throw everything in and relax for a few hours. I always make a double batch because I think it gets better with every reheating.
Burrito Bowl
1 onion diced
1 Green Bell Pepper diced
1 Jalapeno diced
1 15 oz can Black Beans drained
1 cup Brown Rice
½ cup water
½ tsp ground cumin
½ tsp onion powder
½ tsp chili powder
¼ tsp cayenne
Toppings (optional)
Sour Cream (or plain Greek yogurt)
Guacamole (even if it costs extra)
Shredded Cheese
Shredded Lettuce
Homemade Green Salsa (see separate recipe)
Yield: 4 servings
Chop and prepare all of your veggies. If you don’t like spicy food, feel free to omit the Jalapeno or at least remove the seeds and white membrane inside.
Add everything to the slow cooker and stir it up.
Set your slow cooker on high for 3 hours.
Enjoy your 3 hours of free time (Netflix *cough* *cough*)!
