Not Yo Grandma's Potato Salad
Potato salad is a serious conversation starter in the South. If you put 10 southern ladies in a room, I bet you will have 10 different potato salad recipes…. you may even have a few arguments. Mine is a little different because I don’t use eggs, onions, or sweet relish; I use Cottage Lane Spicy Pepper Relish!
Not Yo’ Grandma’s Potato Salad
1 ½ LBS Red Potatoes chopped to bite size pieces
½ cup Mayo
1 tsp Salt
½ tsp Pepper
2 tbsp *Cottage Lane Spicy Pepper Relish “Cape Fear” or “Get Me A Switch”
2 tsp yellow mustard
½ tsp Onion Powder
Start off by preparing your potatoes and boil them for 15 minutes. Once boiled strain and cover with a lint free towel to cool.
When your potatoes are cooled add the them with the remaining ingredients to a bowl and combine being careful not to mash the potatoes too much.
Serve chilled.
Notes: I like a chunkier potato salad which is why I use red potatoes. If you like a smoother consistency, then feel free to use russets. If you aren’t crazy about spicy food, like Angel and I, then start off with less Cottage Lane Spicy Pepper Relish and slowly add it to fit your taste. We also found that as it chills in the fridge it gets a little spicier.
